For leather, I use Lexol leather conditioner. It cleans, and has a nice saddle-soap like aroma to it. For other surfaces, I use Meguiar's interior detailing products.

Dry or damp microfiber cloth to keep everything a nice satin finish.
I hate a shiny interior and leather seats.

I use Mothers VLR... a solid product and gets good reviews/feedback too. Matte finish, not slippery, not oily, mildly sheen yet nearly transparent, and cleans/conditions/protects just fine.
